Who brought the PRALINE over the LOUISIANA???

THE CASKET (CASSETTE) GIRLS

Casket Girls were young French women brought over to New Orleans to marry the colonists of the Louisiana Territory. Most of these women were plucked from orphanages or convents in France and brought over with a small casket containing their belongings. While they waited for a suitable marriage, they were under the instruction of the Ursuline nuns. Part of their domestic education included learning the art of praline making!

As we learned last week, the pralines of France had caramelized sugar and various nuts like almonds and hazelnuts. The casket girls exchanged those hazelnuts and almonds for pecans, due to the abundance of pecan trees in Louisiana!
